A portrait of the winner of the “Grande Cucina Talent Prize,” Gabriel Collazzo, chef at VERO Restaurant in the Ca' di Dio in Venice.
For my illustration, I wanted to play with the idea of classic theatre curtains, as the award ceremony took place at Teatro Menotti, to highlight the significance of both the chef and his winning dish.
This issue also explores the decline in young people choosing culinary education and the challenges of generational turnover in the Italian restaurant industry.
